2022 Le Gras Cuve
The ‘Le Gras Cuve’ is a 50/50 blend of Chardonnay and Petit Manseng. The grapes were picked a little early to retain sharp acidity. The fermentation was long and slow, lasting almost 30 days. The juice was kept cool during fermentation in order to retain aromatics and freshness. Following fermentation the wine was aged 8 months on all lees to bring textures and roundness.
